Webb22 maj 2008 · Protein quality was evaluated by determining the chemical score, i.e., the ratio of the amount of the limiting amino acid in a gram of seaweed protein to the amino acid in whole-egg (the protein, which has the highest net protein utilization value, biological value and protein efficiency ratio value) multiplied by 100 (Brody 1999).
